You're looking for the address of the IMAP service for your mailbox.  I commonly see addresses like:
email.server.com
mail.server.com
imap.server.com

The exact setting is going to depend on your email provider.

Extra background: (based on questioning assumptions)
Evolution doesn't give you a mail server, and won't allow people to send you mail directly.  You still need to have a mail relay to receive and pass on your mail for you.  In the Linux world, I think the common program is sendmail.  Evolution helps you access that mailbox, through POP or IMAP protocols.
You'll likely need to set up an outgoing address as well, for which a lot of servers make port 2525 available because ISPs like to block 25.
